Mushroom & Red Onion Pie

Who doesn’t love a hearty pie with mash and peas? I used a pre-rolled pastry, but feel free to make your own!

Ingredients (makes 1 pie):

  • 1/4 of Jus-Rol shortcrust pastry (I used the pre-rolled one- you can also use puff pastry if you prefer it- and yes it’s vegan!)
  • 1 tbsp Olive Oil
  • 1 Red Onion, finely chopped
  • 3 cloves of finely chopped Garlic
  • 6 Chestnut Mushrooms, chopped into big chunks
  • 1 tbsp vegan Gravy Granules
  • 1 tsp ground Thyme

Sweet Potato and Butternut Squash Mash:

  • 1 peeled Sweet Potato, chopped into small chunks
  • 100g frozen Butternut Squash chunks

Mint Peas:

  • 100g frozen Peas
  • 1 tsp of either fresh or ground Mint


  1. Pre-heat the oven to 180 degrees
  2. In a small pan, heat the Olive Oil on a medium heat
  3. Sauté the Onion and Garlic for 5-7 minutes
  4. Add the Mushrooms for a further 5 minutes. Then add the Thyme and simmer for 5 minutes
  5. In the meantime, line a small pie dish with the pastry, cutting any excess pastry of the edge of the dish. Also cut a circular piece of pastry that will be placed on top once filled
  6. Make the gravy in a small jug- mix 1tbsp of Gravy Granules with 200ml of boiling water
  7. Then add half of the Gravy to to pan and combine
  8. Fill the pie with the mixture and then place the circular piece ofpastry on top. Again cut off any excess pastry from the sides. Pierce a cross in  he middle of the pie with the knife and press the edges with the back of a fork to conceal
  9. Place in the oven on a small tray for 30 minutes. After 20 minutes, add some tin foil to cover the pie so that the top does not burn
  10. While the pie is cooking, cook the Sweet Potato and Butternut Squash in a small pan of boiling water for 20 minutes. Also cook the peas in another small pan for 10 minutes
  11. Once the Sweet Potato and Butternut Squash is cooked, drain and used a potato masher to make it into mash
  12. Also drain the peas and stir through the mint
  13. Place all the food on a plate and re-heat the extra gravy in the microwave from earlier (for about 30 seconds). Pour the gravy over the mash and enjoy!
