Veg & Bean Tomato Stew

You can never beat a good hot stew on a cold January evening! This stew even has 6 of your 5 a day!

Ingredients (serves 2):

  • 1 tbsp Olive Oil
  • 1/2 chopped Red Onion
  • 2 finely chopped Garlic Cloves
  • 1/2 Red Pepper
  • 1/2 tsp Harissa Spices
  • 1/2 tsp smoked Paprika
  • 1 tsp ground Cumin
  • 1 tsp ground Basil
  • 1 Vegetable Stock Cube
  • 1 tin chopped Tomatoes
  • 200g frozen Butternut squash chunks
  • 1/2 tin Kidney Beans
  • 1/2 Courgette, chopped into coin pieces
  • 50g chopped Cherry Tomatoes
  • 1 tbsp Nutritional Yeast Flakes
  • Freshly chopped Basil to serve

To serve:

  • Brown Rice/ Quinoa/ Bread

Method:

  1. Boil the Butternut Squash in a small saucepan for 10 minutes
  2. In the meantime, heat the Olive Oil in a medium pan on a low heat and sautΓ© the Onion, Garlic & Pepper for 5 minutes or until softened
  3. Add all the spices and stir through for 1 minute
  4. Add the chopped Tomatoes and bring to the boil
  5. Add the drained Butternut Squash, Kidney Beans, Courgettes and Cherry Tomatoes. Then Crumble the Stock Cube into the pan and combine into the mixture
  6. Cover the pan with a lid and let the stew simmer for 20 minutes
  7. Serve in a big dish and sprinkle with 1 tbsp of Nutritional Yeast Flakes and chopped Basil. Can also serve with Rice/Quinoa/Bread or still delicious on its own!
