Chickpea & Sweet Potato Dhal

In this freezing cold weather, a big bowl of Dhal is the ultimate comfort meal. This creamy Chickpea, Sweet Potato and Red Lentil Dhal is so delicious and 3 of your 5 a day!

Ingredients (serves 2):

  • 1/2 chopped White Onion
  • 2 Garlic Cloves, finely chopped
  • 1 tsp Coconut Oil
  • 1 tsp medium Curry Powder
  • 1 tsp ground Cumin
  • 1 tsp freshly chopped Coriander
  • 1/2 tsp ground Cinnamon
  • 1/2 tsp grated Ginger (can also use ground)
  • 1 Vegetable Stock Cube
  • 100g Red Lentils
  • 1 medium Sweet Potato- peeled and chopped
  • 1/2 tin of drained Chickpeas
  • 100-200ml of Almond/Coconut Milk

To serve:

  • Black Rice or Rustic Bread and any other Veg that takes your fancy


  1. Soften the Sweet Potatoes by boiling them for 5 minutes
  2. In the meantime, heat the Coconut Oil in a medium pan on a low heat and fry the Onions and Garlic for 5 minutes
  3. Add all the spices (except the Coriander), Lentils and stir through
  4. Add 250ml of boiling water to the Lentils, crumble a stock cube into the pan and stir together
  5. Also add the drained Sweet Potatoes, Chickpeas, Coriander and 100ml of Almond Milk
  6. Stir together, cover with a lid and leave to simmer for 30 minutes. Make sure to stir every 5 minutes, adding more Almond Milk if the Dhal is sticking to the pan
  7. Serve in a big dish and top with fresh Coriander
