Tofu Scramble

I have admitted in the past that Tofu is not my favourite thing. However I have been trying to incorporate it more into my diet and thought I would try the new ‘trendy’ Tofu Scramble. To my surprise, it was absolutely delicious and a great way to get lots of protein.

Ingredients (serves 1):

  • 1 tbsp Olive Oil
  • 1/2 White Onion
  • 2 Garlic cloves
  • 150g drained firm silken Tofu
  • 2 Chestnut Mushrooms
  • 6 Cherry Tomatoes, halved
  • 1 tsp ground Turmeric
  • 1/2 tsp ground Cumin
  • 1/2 tsp ground Paprika
  • 2 handfuls of fresh Spinach
  • 2 slices of toasted Rye Bread (or any bread of your choice)


  1. Heat up a small frying pan on a medium heat and add 1/2 tbsp of Olive Oil
  2. Add the Onion and 1 chopped Garlic clove and sauté for 5-7 minutes
  3. In the meantime, chop the Mushrooms, Tomato, other Garlic clove and place in a small saucepan with the remaining Olive Oil on a low heat. Stir frequently
  4. Once the Onion and Garlic has softened, add the Turmeric, Cumin, Paprika and stir through
  5. Then add the Tofu, stirring through the Onion and Spices. Use a wooden spoon to chop the Tofu up into small, scramble like pieces
  6. Allow the Tofu Scramble to simmer for 6-8 minutes, stirring frequently
  7. Whilst the Tofu is simmering, toast your bread and then top with freshly chopped Spinach
  8. Once the Tofu Scramble and Tomatoes and Mushrooms are cooked, top your toast with both mixtures. Enjoy!
