Blueberry Muffins

Blueberry Muffins are my absolute favourite. However most recipes are full of sugar. Therefore I have tried to cut some of the sugar by replacing it with mashed banana so that it is still sweet, but much healthier. These are perfect in the afternoon with a cup of tea!

Ingredients (makes 11):

  • 2 cups plain Flour
  • 1/4 cup Banana Chip Flour
  • 1/4 cup Brown Sugar
  • 2 tsp Baking Powder
  • 1/3 cup Sunflower Oil
  • 3/4 cup Coconut Milk (you may need little bit extra if mixture is too thick)
  • 1 tsp Apple Cider Vinegar
  • 1 mashed large Banana
  • 1 cup Blueberries (I use frozen when not it season)
  • Seeds or Granola to sprinkle on top


  1. Pre-heat the oven to 200 degrees and line a muffin tin with 11 muffin cases
  2. Place all the ingredients (except from the Blueberries) in a large bowl
  3. Combine with an electric hand mixer- if the mixture seems too stiff add extra Coconut Milk
  4. Once combined, fold in the Blueberries. Do not combine too much as the whole mixture will turn blue
  5. Spoon the mixture evenly into each muffin case. I try to make sure each case is at least 3/4 full
  6. Sprinkle each muffin with a few Seeds or Granola- I sprinkled mine with my Homemade Granola (see previous)
  7. Place in the oven for 20 minutes or until golden brown on top – Enjoy!
