Chilli Non Carne 

This is one of my favourite comforting meals. It is so easy to make as you can throw all the ingredients into one pot!

Ingredients (serves 2-3):

  • 1 chopped White Onion
  • 1 tbsp Extra Virgin Olive Oil
  • 1 Red Pepper
  • 1 tin Chopped Tomatos
  • 1 tin Mixed Bean Salad (drained)
  • 2 tbsp Red Lentils
  • 1 Vegetable Stock Cube
  • 1 tsp ground Corriander
  • 1 tsp ground Cumin
  • 1 tsp Paprika
  • 1/2 tsp ground Cinnamon
  • 1/2 tsp ground Chilli
  • 1/4 tsp ground Pepper

To serve:

  • 1 cup Brown Rice
  • 1 Avocado
  • Fresh Spinach for the side

Method:

  1. Boil a small pan of water. Once boiled add the Brown Rice and put a timer on for 30 minutes
  2. Heat the oil in a medium pan on a medium heat and add the chopped Onion
  3. Once the Onion becomes soft, add the chopped Pepper and combine
  4. Then add all of the spices to the pan and leave for 2-3 minutes
  5. Add the Chopped Tomatos, Mixed Beans, Lentils and crumbled Stock Cube
  6. Fill the Tomato tin with water to a quarter full and add to the pan
  7. Once the pan is boiling leave to simmer for the remaining time that the rice needs (should be around 20 minutes)
  8. Then serve the Brown Rice and Chilli with a side of Spinach and top with Avocado
  9. Any extra portions can be refrigerated and eaten the next day or frozen
