Easy & Healthy Granola 

I could easily eat granola for every meal of the day. However the high sugar and fat content led me to creating my own, healthier version.

Ingredients (10 servings):

  • 3 cups jumbo Rolled Oats
  • 1 cup Mixed Seeds of your choice (pumpkin and sunflower seeds are my favourite)
  • 1/2 cup of desiccated Coconut (alternatively you can use chopped nuts or a mixture of both)
  • 1/2 tsp ground Cinnamon
  • 1/2 tsp ground Nutmeg
  • 2 tbsp Coconut Oil

To serve:

  • Vegan Yoghurt
  •  Blueberries (I always use frozen when not in season)
  • Sprinkle of Chia Seeds

Method:

  1. Pre-heat the oven to 150 degrees
  2. Line a large baking tray with baking paper
  3. Combine the Oats, Seeds, Coconut/Nuts, Cinammon and Nutmeg in a large mixing bowl
  4. Melt the Coconut oil and gradually add to the mixture
  5. Once combined spread evenly on the baking tray
  6. Place in the oven for a total of 25-30 minutes- mixing half way through
  7. Once cooled place into an airtight container and use within 2 weeks
